THE WINERY, A PERFECT CLIMATE

AMONG STONE, WOOD AND WINE

The winery was adapted from an old ox stable, preserving its original structure with stone walls and a wooden ceiling, thus maintaining the space’s authenticity and charm.

It is the perfect place for crafting exceptional wine, with an average temperature below 20 °C and a consistently good level of humidity.
Large French oak vats, made especially for this winery by the prestigious French cooperage Seguin Moreau, are used in the winemaking process, just as in the great “Châteaux”.

THE HANDCRAFTED ART

OF WINE

The harvest is mechanical and carried out at night, ensuring grapes at the ideal level of ripeness and temperature. Only whole berries proceed to the vats, with no crushing or pressing.
Some grape varieties age in French oak, gaining complexity and elegance. Each variety is vinified separately, and the blends are created before bottling, preserving authenticity and character.

All vats and barrels are made of French oak, produced exclusively for our winery by the prestigious cooperage Seguin Moreau.
